Ingredients

For the coating

  • 1/2 cup grated Parmesan cheese offers a rich, nutty flavor
  • 1/2 cup breadcrumbs adding the perfect crunch
  • 1/2 teaspoon salt to enhance the flavors
  • 1/4 teaspoon black pepper for a hint of spice
  • 1/2 teaspoon garlic powder infusing delicious seasoned notes

For the zucchini crisps

  • 2 medium zucchinis, thinly sliced to maximize crispness
  • 1 large egg, beaten to bind the coating
  • Cooking spray or olive oil to promote golden browning

Instructions

Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, salt, and pepper.

Coating Zucchini

  • Dip each thinly sliced zucchini piece into the beaten egg.
  • Roll the zucchini slices in the Parmesan breadcrumb mixture until fully covered.
  • Place the coated zucchini slices onto the prepared baking sheet in a single layer, ensuring they aren’t overcrowded.
  • Lightly spray or drizzle them with olive oil.

Baking

  • Bake in the oven for 20-25 minutes, flipping halfway through.
  • Remove from the oven when crispy and golden brown, then let cool slightly before serving.

Notes

For added flavor, you can experiment with different herbs like oregano or Italian seasoning. You might also replace half of the breadcrumbs with crushed nuts for a different texture. Ensure your zucchini is dry after washing for better coating adherence.
