  • 2 cups all-purpose flour Forms the base of the bread.
  • 1.5 teaspoons baking powder Helps the bread rise.

Preparation

  • Preheat your oven to 350°F (180°C).
  • In a large bowl, combine the shredded zucchini, optional green onions, eggs, sour cream, and melted butter until smooth.
  • Stir in the shredded cheddar cheese.
  • In another bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Pour the batter into a greased 9×5 inch loaf pan.
  • Bake for 50-70 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool slightly before slicing.

Notes

If zucchini is very moist, lightly pat the shreds with a paper towel to remove excess moisture. Consider adding herbs or mixing in other vegetables for variations. This bread can be served with soups, salads, or as a breakfast toast.
