Ingredients

For the Marinade and Skewers

  • 1/3 cup sweet Thai chili sauce The perfect balance of heat and sweetness.

  • 1 tablespoon fresh grated ginger Adds a zesty kick.
  • 2 tablespoons chili paste (Thai curry or Gochujang) For added heat and complexity.

Instructions
 

Make the Peanut Sauce

  • In a glass jar or blender, combine the creamy peanut butter, tamari/soy sauce, Thai red curry paste, chopped pickled ginger, and toasted sesame oil. Blend until smooth, adjusting the texture by adding water as needed.

Marinate the Steak

  • In a mixing bowl, mix the sweet Thai chili sauce, tamari, chopped garlic, grated ginger, and chili paste. Toss in the cubed flank steak and coat it evenly with the marinade. Allow the steak to marinate for at least 10 minutes.

Prepare Skewers

  • Thread the marinated beef pieces onto skewers, spacing them evenly for balanced cooking.

Grill

  • Preheat your grill or grill pan to medium-high heat. Grill the skewers for about 8 to 12 minutes, turning occasionally until lightly charred and cooked to desired doneness.

Serve

  • Arrange the skewers over a bed of rice or coconut rice. Garnish with lime wedges, avocado, sesame seeds, and fresh cilantro. Serve the zesty peanut sauce on the side for dipping.

Notes

For deeper flavor, consider marinating the flank steak for a few hours or overnight. You can also add vegetables to the skewers or substitute tofu for a vegetarian option. Adjust spice levels as needed.
