Instructions
 

Preparation

  • Preheat the oven to 325°F (163°C).
  • Grease the sides of a springform pan. In a bowl, combine graham cracker crumbs and melted butter, mixing until all crumbs are coated. Press into the base of the prepared pan.
  • In a large mixing bowl, beat softened cream cheese with sugar until smooth. Add melted white chocolate and mix until fully blended.
  • Add eggs one at a time, mixing after each addition.
  • Stir in vanilla extract and sour cream.
  • Pour the batter over the prepared crust and spread evenly.

Baking

  • Bake in the preheated oven for 50-60 minutes, until the center is set but slightly jiggly.

Topping & Chilling

  • While the cheesecake is baking, toss chopped strawberries with 2 tablespoons of sugar and let macerate for 15 minutes.
  • Once baked, cool the cheesecake completely in the pan, then refrigerate for at least 4 hours or overnight.
  • Before serving, top with macerated strawberries.

Notes

For a richer flavor, make the cheesecake a day ahead. Use fresh strawberries for the best result and experiment with healthier ingredient alternatives if desired.
