Preparation

  • Place the softened cream cheese in a large mixing bowl. Beat it with an electric mixer until smooth and creamy.
  • Add in the powdered sugar and vanilla extract, and mix until fully combined into a sweet blend.
  • Carefully stir in the melted white chocolate chips and raspberry puree.
  • Gradually introduce the graham cracker crumbs, mixing until a dough-like consistency forms.
  • Use your hands to roll the mixture into small balls, about 1-inch in diameter, and arrange on a parchment-lined baking sheet.

Chilling and Coating

  • Chill the balls in the refrigerator for at least one hour to firm up.
  • Melt the remaining white chocolate chips in the microwave in 30-second intervals, stirring until smooth.
  • Dip each chilled cheesecake ball into the melted white chocolate and coat them fully.
  • Return the coated balls to the parchment paper to set. Optional: top with fresh raspberry or drizzle with white chocolate.
  • Allow the coated cheesecake balls to chill in the refrigerator for an additional 30 minutes before serving.
