Preparation

Forming the Balls

  • Roll the chilled cheesecake mixture into small balls, about 1 inch in diameter.

Coating

  • Melt the reserved white chocolate chips in a microwave-safe bowl, stirring every 20 seconds until smooth.
  • Dip each cheesecake ball into the melted white chocolate, ensuring it is completely coated.
  • Place the coated balls on a parchment-lined baking sheet and refrigerate for another 30 minutes to allow the chocolate to set.

Serving

  • Garnish with fresh raspberries before serving.

Notes

Consider adding lemon zest to the mixture for a refreshing twist. You can also coat with crushed nuts for texture or drizzle melted white chocolate on top for presentation.
