  • 1/2 cup white chocolate chips for coating
  • 1/4 cup crushed graham crackers for extra crunch

Preparation

  • In a medium-sized mixing bowl, begin by beating the softened cream cheese, along with the mashed raspberries and powdered sugar. Mix until the combination is smooth and creamy.
  • In a microwave-safe bowl, melt the 1/2 cup of white chocolate chips. Heat them in short intervals, stirring every 20 seconds until fully melted and smooth.
  • Once melted, add the white chocolate and vanilla extract to your cream cheese mixture. Stir thoroughly until everything is fully combined.
  • Gently fold in the graham cracker crumbs until they are blended well into the mixture.
  • Using a spoon or your hands, scoop out portions of the mixture and roll them into small balls, about 1 inch in diameter. Place your formed balls on a parchment-lined tray.
  • Place the tray in the freezer for at least 1 hour, or until the balls are firm and set.
  • Melt the remaining 1/2 cup of white chocolate chips and dip each ball into the melted chocolate. Roll them in crushed graham crackers.
  • Return the coated balls to the parchment-lined tray and freeze again for an additional 15 minutes.
  • Serve chilled and enjoy!

Notes

For best results, consider using fresh raspberries. If they're out of season, frozen ones work as well. Customize your cheesecake balls by experimenting with different extracts or toppings.
