Preparation

  • Place 4 cups of ripe watermelon chunks into a blender and puree until silky-smooth.
  • For an ultra-creamy texture, strain the puree through a fine mesh sieve to remove excess pulp.

Mixing

  • In a spacious mixing bowl, pour in your pureed watermelon, followed by 1 cup of heavy cream.
  • Add 1/2 cup of milk and 3/4 cup of sugar, stirring gently until dissolved.
  • Complement the mixture with 1 teaspoon of vanilla extract, 1 tablespoon of lemon juice, and a pinch of salt. Stir to combine.

Churning

  • Pour the mixture into your ice cream maker and churn according to the manufacturer's instructions, typically for about 20-25 minutes.
  • Once it reaches a soft-serve consistency, transfer it to an airtight container.
  • Freeze for a minimum of 2-3 hours or until firm.
