Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the peeled and cubed sweet potato with olive oil, maple syrup, cinnamon, salt, and pepper until they are beautifully coated.
  • Spread the sweet potato mixture in a single layer on a baking sheet lined with parchment paper.

Roasting

  • Place the baking sheet in the oven, letting the sweet potatoes roast for 25-30 minutes. Toss them halfway through roasting.
  • While the sweet potatoes are roasting, toast the chopped walnuts in a dry skillet over medium heat for about five minutes, stirring frequently until they become fragrant and golden-brown.

Serving

  • Once the sweet potatoes are tender with caramelized edges, remove them from the oven and let them cool slightly.
  • Top the sweet potatoes with crumbled goat cheese and toasted walnuts.
  • Garnish with freshly chopped parsley.

Notes

Choose sweet potatoes that are similar in size for even cooking. Avoid overcrowding the baking sheet to prevent steaming. Adjust salt and pepper to taste before serving.
