Instructions
 

Preparation

  • Heat the olive oil in a large skillet over medium heat.
  • Add the finely chopped onion and sauté until softened, about 5 minutes.
  • Stir in the minced garlic and sliced mushrooms, cooking until tender and golden brown, about 7 minutes.
  • Add the fresh spinach and cook for another 2-3 minutes until wilted. Season with salt and pepper to taste.
  • Remove from heat and set aside.

Mixing the Filling

  • In a separate bowl, combine ricotta cheese, 1.5 cups of mozzarella, grated Parmesan, egg, and nutmeg (if using). Mix until smooth.

Assembling the Lasagna

  • Preheat oven to 350°F (175°C). Spread a layer of mushroom-spinach mixture in a baking dish.
  • Place 4 lasagna noodles over the mixture. Spread a layer of the cheese mixture over the noodles, followed by another layer of mushroom-spinach. Repeat layering twice more, finishing with mushroom-spinach on top.
  • Cover with aluminum foil and bake for 30 minutes.
  • Remove foil and bake for an additional 10-15 minutes until top is golden and bubbly.
  • Let lasagna rest for 10 minutes before slicing.
