Preparation

  • Begin by toasting the dried guajillo and ancho chiles in a skillet over medium heat for 2-3 minutes, or until fragrant. Remove the stems and seeds.
  • In a blender, combine the toasted chiles, minced garlic, chopped onion, cumin, oregano, ground cloves, ground cinnamon, and 1 cup of beef broth. Blend until smooth.
  • Season the beef chunks generously with salt and pepper.
  • In a large pot, sear the seasoned beef on high heat until browned on all sides.

Cooking

  • Pour the blended sauce over the beef, adding the remaining beef broth and vinegar. Stir well to combine.
  • Reduce the heat and cover the pot. Allow it to simmer on low for 2-3 hours, or until the beef becomes tender and easily shreds.
  • Once the beef is perfect, shred it using two forks and stir it back into the broth.

Serving

  • Warm the corn tortillas and fill them generously with birria. Garnish with fresh cilantro and sliced onion.

Notes

Toasting the chiles amplifies their flavors. You can use a slow cooker for added convenience. For an extra kick, consider adding spices like paprika or chili powders. Feel free to adjust the seasoning to fit your tastes. Let the birria rest for a few minutes before serving.
