Ingredients

  • 1 large 1 large egg binding the mixture beautifully.
  • 1/2 cup 1/2 cup molasses delivering a rich, robust flavor.
  • 1 tsp 1 tsp vanilla extract adding a warm and inviting aroma.

For the Royal Icing

  • 2 large 2 large egg whites fluffy and airy.
  • 1 1/2 cups 1 1/2 cups powdered sugar sweet and delicate.
  • 1/2 tsp 1/2 tsp lemon juice providing a bright tang.
  • to taste Food coloring for a vibrant winter village scene.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  • In a separate bowl, cream together the softened butter and brown sugar until light and fluffy.
  • Add in the egg, molasses, and vanilla extract, mixing until smooth.
  • Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  • Divide the dough into two halves, wrap each in plastic wrap, and place them in the fridge to chill for at least an hour.

Baking

  • Roll out the dough on a floured surface to about 1/4 inch thickness.
  • Use cookie cutters to create shapes resembling houses, trees, and people.
  • Bake for 8-10 minutes, or until they’re a lovely golden color.
  • Allow them to cool completely on a wire rack.

Decorating

  • For the royal icing, beat the egg whites with powdered sugar and lemon juice until soft peaks form.
  • Transfer the icing into piping bags for decorating the gingerbread cookies.
  • Let the icing harden for 1-2 hours before displaying or serving.

Chill the dough properly for easier handling and take your time when decorating for stunning results. Common mistakes include not measuring ingredients accurately and overbaking. Consider substituting half of the flour with whole wheat or using honey or maple syrup for healthier alternatives.
