For the Teriyaki Shrimp

For the Pineapple Rice

  • 2 cups cooked white or jasmine rice Day-old rice preferred for texture.
  • 1 cup fresh pineapple, diced Juicy addition that complements the shrimp.
  • 1 tbsp sesame oil For sautéing.
  • 2 green onions chopped Adds freshness.
  • 1/4 cup red bell pepper, diced Brings crunch and color.
  • 1 tbsp soy sauce Enhances rice's flavor.
  • 1 tsp rice vinegar Brightens the taste.
  • 1/2 tsp garlic powder Extra seasoning for rice.

For Garnish

Instructions
 

Preparation

  • Combine teriyaki sauce, soy sauce, sesame oil, honey, minced garlic, grated ginger, and red pepper flakes in a medium bowl. Add shrimp and toss to coat. Marinate for at least 15 minutes.

Cooking the Shrimp

  • Heat a large skillet over medium-high heat. Add marinated shrimp and cook for 2-3 minutes on each side until fully cooked. Remove from heat.

Preparing the Pineapple Rice

  • In the same skillet, add sesame oil and heat over medium. Add chopped green onions, red bell pepper, and fresh pineapple. Sauté for 2-3 minutes until softened.
  • Add cooked rice to the skillet and mix well with vegetables. Stir in soy sauce, rice vinegar, garlic powder, salt, and pepper. Sauté for another 2-3 minutes.

Assembling

  • Use a ring mold or small bowl to layer the pineapple rice, followed by cooked shrimp. Press gently to shape the stack.

Garnishing and Serving

  • Garnish stacks with cilantro, sesame seeds, and a squeeze of lime juice. Serve immediately.

Notes

Feel free to add other vegetables like peas or carrots for added flavor. Marinating shrimp longer enhances flavor further. Use freshly cooked rice if day-old isn’t available.
