Teriyaki Salmon Avocado Rice Stack

Ingredients
  

For the Salmon

  • 2 fillets salmon fillets, rich and flaky
  • 1/4 cup teriyaki sauce, sweet and savory
  • 1 tablespoon olive oil, smooth and fragrant
  • Salt and pepper to taste, for seasoning

For Assembly

  • 1 cup cooked white or brown rice, fluffy and warm
  • 1 ripe avocado, sliced, creamy and luscious
  • 1 tablespoon sesame seeds (for garnish), crunchy and nutty
  • 1 tablespoon fresh cilantro, chopped (for garnish), bright and aromatic
  • 1 teaspoon lime juice (optional, for extra flavor), tangy and refreshing

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Season the salmon fillets generously with salt and pepper, then drizzle half of the teriyaki sauce over them.
  • Bake the salmon for approximately 12-15 minutes, or until it flakes easily with a fork.
  • While the salmon is baking, prepare the rice according to package instructions.
  • In a skillet, heat the olive oil over medium heat and sear the avocado slices for about 1-2 minutes on each side.

Assembly

  • Once the salmon is cooked, gently break it into large flakes and drizzle the remaining teriyaki sauce over it.
  • Layer cooked rice at the bottom of your serving dish, followed by teriyaki salmon and seared avocado slices. Repeat for a second stack.
  • Sprinkle sesame seeds and fresh cilantro on top, and add lime juice if desired.

Notes

For added flavor, consider marinating the salmon in teriyaki sauce for an hour before baking. You can also add toppings such as sliced radishes or mango. Experiment with different bases like brown rice or quinoa.
