  • Pour in the diced tomatoes with juices and vegetable broth; bring to a light simmer.
  • After about 10 minutes, stir in the black beans and cook for an additional 10 minutes until sweet potatoes are tender.
  • Serve hot, topped with fresh cilantro or avocado.

Notes

For healthier options, use fresh tomatoes instead of canned for less sodium, and skip cheese or use a plant-based alternative. Add spinach or kale towards the end for extra nutrition.
