For the Sauce

  • 1 cup fresh pineapple, finely chopped Always use fresh pineapple for the best flavor and texture.
  • 1/2 cup water
  • 1/4 cup white vinegar
  • 1/4 cup honey To lower sugar content, consider using stevia or other natural sweeteners.
  • 2 tablespoons soy sauce You can substitute with tamari or coconut aminos for gluten-free or soy-free options.
  • 1 tablespoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 2 teaspoons cornstarch To thicken the sauce.
  • 2 tablespoons additional water (for cornstarch)
  • 1 teaspoon red chili flakes Adjust according to spice preference.
  • Salt, to taste

Preparation

  • In a saucepan over medium heat, combine the finely chopped fresh pineapple, 1/2 cup of water, white vinegar, honey, soy sauce, minced ginger, and minced garlic. Allow the mixture to come to a simmer, stirring occasionally to dissolve the honey.
  • Once simmering, reduce the heat and let the mixture simmer gently for about 10 minutes.
  • In a small bowl, dissolve the cornstarch in 2 tablespoons of water to create a slurry.
  • Stir the cornstarch slurry into the simmering sauce along with the red chili flakes and salt. Continue to simmer for an additional 5 minutes, or until the sauce has thickened to your desired consistency.
  • Remove the saucepan from heat and let the sauce cool. Enjoy it warm or at room temperature.

Notes

Consider adding citrus for a refreshing zing or increasing the chili flakes for extra heat. This sauce keeps well in the refrigerator for up to a week.
