Instructions
 

Preparation

  • Cut chicken into bite-sized pieces.
  • Slice bell peppers and onion.
  • Marinate chicken in a bowl with soy sauce and minced garlic for at least 20 minutes.

Cooking

  • Heat oil in a skillet over medium-high heat.
  • Add the marinated chicken and sauté until golden brown (about 7-10 minutes).
  • Remove the chicken and set it aside.
  • Stir-fry bell peppers, onion, and pineapple for about 5 minutes.
  • Mix sauce ingredients: Whisk together ketchup, brown sugar, rice vinegar, and any leftover marinade.
  • Pour the sauce over the veggies and simmer for three minutes.
  • Combine chicken and veggies, tossing until well-coated in the sauce.

Notes

Serve over fluffy jasmine rice or fried rice. Customize with your favorite vegetables or proteins.
