Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C).
  • In a medium bowl, combine the graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Press firmly into the bottom of a springform pan.
  • Bake the crust for about 10 minutes, then allow to cool.

Cheesecake Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth.
  • Gradually add 1 cup of granulated sugar and vanilla extract, blending until uniform.
  • Add eggs one by one, mixing well after each addition.
  • Stir in the sour cream until smooth.

Strawberry Swirl

  • In a separate bowl, combine the strawberry puree, 2 tablespoons sugar, and lemon juice. Stir gently until the sugar dissolves.

Assembly and Baking

  • Pour the cheesecake mixture over the cooled crust, spreading evenly.
  • Dollop the strawberry puree on top of the cheesecake batter and gently swirl it through using a toothpick.
  • Bake for 55-60 minutes until the center is set but slightly jiggly.
  • Turn off the oven and let the cheesecake sit for an hour inside.
  • Cool completely at room temperature and then refrigerate for at least 4 hours or ideally overnight.

Notes

Ensure cream cheese is at room temperature for mixing. Don't rush cooling to prevent cracks. Serve with whipped cream or fresh strawberries.
