Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  • Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the milk until just combined.
  • Stir in the pureed strawberries and add food coloring if desired.
  • Pour the batter evenly into the prepared cake pans. Bake for 25-30 minutes or until a toothpick comes out clean. Cool completely.

Frosting

  • In a large bowl, beat the heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form.
  • Divide frosting into three bowls; mix freeze-dried strawberry powder into one for a light pink color.
  • Place one cake layer on a serving plate. Spread a layer of plain frosting on top, then place the second layer and frost using the ombre technique.

Decoration

  • Decorate the cake with white chocolate chips, fresh strawberries, and red pearls or sprinkles.
  • Allow the cake to set before slicing and serving.

Notes

Adding lemon zest to the batter or using other berry purees can enhance flavor. For easier frosting, consider using pre-made frosting and chill the cake after frosting to help it set.
