For the cookies

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the egg and almond extract, mixing well until fully incorporated.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually mix this dry mixture into the wet ingredients.
  • Stir in the maraschino cherry juice and chopped maraschino cherries until the dough is smooth.
  • Scoop tablespoon-sized portions of dough and roll them into balls. Place on the prepared baking sheet with 2 inches apart.
  • Flatten each dough ball slightly.

Baking

  • Bake for 10-12 minutes or until edges are golden brown. Transfer to a wire rack to cool completely.

Frosting

  • In a clean mixing bowl, beat together the softened butter and powdered sugar until creamy.
  • Add in the strawberry puree (or jam) and vanilla extract, beating until fluffy. Add food coloring if desired.
  • Once the cookies are cooled, spread a generous layer of frosting on top.

Garnishing

  • Decorate with halved maraschino cherries or diced strawberries before serving.

Notes

Store cookies in an airtight container at room temperature for up to five days. For longer storage, freeze unfrosted cookies for up to three months.
