Ingredients
  

For the Macaron Shells

  • 1.75 cups 1 3/4 cups powdered sugar
  • 1 cup 1 cup almond flour
  • 4 large 4 large egg whites
  • 0.25 teaspoon 1/4 teaspoon cream of tartar Stabilizes egg whites
  • 1 cup 1 cup granulated sugar Adds sweetness
  • 0.5 teaspoon 1/2 teaspoon vanilla extract For flavor
  • optional drops Optional pink food coloring For visual appeal

For the Filling

  • 0.5 cup 1/2 cup unsalted butter At room temperature
  • 1.5 cups 1 1/2 cups powdered sugar
  • 0.25 cup 1/4 cup strawberry jam For flavor and filling

Instructions
 

Preparation

  • Preheat your oven to 300°F (150°C) and prepare baking sheets with parchment paper.
  • Sift together the powdered sugar and almond flour into a bowl to eliminate lumps.
  • In a clean bowl, beat the egg whites and cream of tartar until soft peaks form.
  • Gradually sprinkle in the granulated sugar while continuing to beat until stiff peaks are achieved.
  • Add in the vanilla extract and optional pink food coloring, mixing just until combined.
  • Gently fold in the sifted almond flour and powdered sugar mixture until a smooth batter forms.

Piping and Baking

  • Fill a piping bag with the macaron batter and carefully pipe small circles onto the prepared baking sheets.
  • Optionally, tap each sheet gently on the counter to help air bubbles escape.
  • Let the piped discs rest at room temperature for 30-60 minutes until a slight skin forms on top.
  • Bake for 15-18 minutes, then allow to cool completely on the sheets.

Filling and Assembly

  • Beat the softened unsalted butter and powdered sugar together until fluffy.
  • Stir in the strawberry jam until well combined.
  • Pipe the filling onto the flat side of half of the macaron shells and sandwich with the other halves.

Notes

Store macarons in an airtight container in the fridge for up to a week, or freeze them for longer preservation. Experiment with different flavors or fillings!
