Preparation

  • In a small bowl, dissolve the yeast in warm milk with granulated sugar. Let it sit for about 5 minutes until frothy.
  • In a large mixing bowl, whisk together the melted butter, egg, and salt. Stir in the activated yeast mixture until well combined.
  • Gradually add flour, one cup at a time, stirring until a soft dough forms.
  • Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth.
  • Place the dough in a greased bowl, cover it with a clean cloth, and let it rise for 1 hour until it doubles in size.

Filling Preparation

  • While your dough rises, beat together the softened cream cheese, powdered sugar, heavy cream, and vanilla extract in a separate bowl to create a smooth cheesecake filling.
  • In another bowl, mix the chopped strawberries with sugar and lemon juice. Set aside to macerate for about 15 minutes.

Assembly

  • Once the dough has risen, punch it down and roll it out into a rectangle on a floured surface.
  • Evenly distribute the cheesecake filling over the rolled-out dough, leaving a small border around the edges.
  • Tightly roll the dough from one end to the other, creating a log shape.
  • Cut the log into 12 even pieces and place them in a greased 9×13-inch baking dish.
  • Cover the rolls and let them rise for another 30 minutes.

Baking
