Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the egg and vanilla extract to the mixture, stirring until fully combined.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually introduce this dry mixture to the wet ingredients, mixing until just combined.
  • Gently fold in the crushed freeze-dried strawberries.

Cheesecake Filling

  • In another bowl, beat together the softened cream cheese, granulated sugar, vanilla extract, and strawberry jam or puree until smooth and creamy.

Assembly

  • Scoop about 1 tablespoon of the cookie dough and flatten it in your hand. Place a small spoonful of the cheesecake filling in the center, then cover with another tablespoon of cookie dough, sealing the edges tightly.
  • Place the stuffed cookies on the prepared baking sheet, spacing them adequately.
  • Bake for 10-12 minutes, or until the edges are golden brown and the center is set.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Ensure your butter is at room temperature, and do not rush the mixing of your cheesecake filling to avoid lumps. For best results, chill the dough before baking.
