For the strawberry topping

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or lightly grease the wells.
  • In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter for the crust. Stir until coated and press a tablespoon into each muffin well.
  • Bake for 5-7 minutes until golden brown, then cool.

Cheesecake Filling

  • Beat cream cheese, powdered sugar, and vanilla extract until smooth. Add sour cream and mix until thoroughly combined.
  • Spoon or pipe the filling into each cooled muffin well over the crust and smooth the tops.

Topping

  • Combine granola, chopped pecans (if using), and melted butter in a small bowl. Sprinkle over cheesecake filling and press gently.
  • Return to oven for another 8-10 minutes until the topping is golden and filling has set. Cool to room temperature.

Strawberry Topping

  • Toss diced strawberries with granulated sugar in a bowl. Let sit for 5-10 minutes to enhance juiciness.
  • Spoon strawberry topping over cheesecake bites just before serving.

Notes

Use softened cream cheese for a smooth filling. Cool the crust completely before adding filling to avoid runniness. Ensure the topping is pressed down firmly for texture.
