Preparation

  • Preheat your oven to 325°F (165°C).
  • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until moistened.
  • Press the mixture down into a greased 9x13-inch baking pan to form an even crust.

Make the cheesecake filling

  • In a large mixing bowl, beat the softened cream cheese with the granulated sugar until smooth.
  • Add the eggs one at a time, beating well after each addition.
  • Stir in the vanilla extract, sour cream, and flour until mixed and smooth.

Assemble the bars

  • Pour the cheesecake filling over the prepared crust, spreading evenly.
  • Bake for 30-35 minutes or until the center is set and the edges are lightly golden.
  • Let the bars cool to room temperature, then refrigerate for at least 2 hours.

Prepare the topping

  • In a small saucepan, combine diced strawberries, sugar, and lemon juice. Cook over medium heat for 5-7 minutes until thickened.

Notes
