Preparation

  • Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until they resemble wet sand.
  • Press the mixture firmly into the bottom of your prepared pan to form the crust.
  • In a large mixing bowl, beat the softened cream cheese until silky and smooth.
  • Gradually add in the granulated sugar and vanilla extract, blending until well incorporated.
  • Add the eggs one at a time, mixing on low speed just until incorporated.
  • Stir in the sour cream and pureed strawberries until well blended.

Baking

  • Pour the cheesecake filling over the prepared crust in the springform pan and smooth the top.
  • Bake for 50-60 minutes until the top is set but slightly jiggly in the center.
  • Turn off the oven and let the cheesecake cool with the door slightly ajar for about an hour.
  • Transfer the cheesecake to the refrigerator and chill for at least 4 hours or overnight.

Notes

Make sure to bring cream cheese to room temperature for smooth blending. Using a water bath can give a creamier texture. Don't skip the cooling step to prevent cracking.
