For the frosting and assembly

  • 1 1/2 cups heavy cream Whipped to perfection for frosting.
  • 1/2 cup powdered sugar Adds sweetness and stability to whipped cream.
  • 1 cup diced strawberries Added between layers for a delightful texture.
  • whole strawberries for garnish For an elegant presentation.

Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C). Generously grease and line your cake pans with parchment paper.
  • Prepare the cake batter according to the box instructions, folding in the freshly mashed strawberries gently.
  • Bake as directed for about 25-30 minutes, checking for doneness with a toothpick. Let them cool completely on a wire rack.
  • In a separate bowl, beat the softened cream cheese and granulated sugar until smooth. Add the eggs and vanilla extract, mixing until combined.
  • Pour the cheesecake mixture into a greased pan and bake for 35-40 minutes. Let cool completely.
  • For the frosting, whip the heavy cream and powdered sugar until stiff peaks form.

Assembly

  • Layer the first sponge cake, add a layer of cheesecake, sprinkle with diced strawberries, and a dollop of frosting. Repeat layers as needed.
  • Frost the top and sides of the cake. Garnish with whole strawberries.
  • Chill the cake in the refrigerator for at least an hour before serving.
