Filling Ingredients

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  • Add the minced garlic and cook for an additional minute, stirring continuously to prevent burning.
  • Gradually add the chopped spinach and cook until wilted, about 3-4 minutes. Remove the skillet from the heat and let it cool.
  • In a large bowl, mix the ricotta, feta, and Parmesan cheeses along with the eggs until well combined.
  • Stir in the cooled spinach and onion mixture, nutmeg, salt, pepper, and dill.
  • Roll out the pie crust and fit it into a 9-inch pie dish. Spoon the filling into the crust.
  • Roll out the second pie crust, place it over the filling, seal the edges, and make slits in the top crust for ventilation.
  • Beat an egg and brush it over the top for a golden finish.
  • Bake for 35-40 minutes until the crust is golden and the filling sets.
  • Allow the pie to cool for about 10 minutes before slicing and serving.

Notes

For added heat, toss in crushed red pepper flakes. Customize with other vegetables like mushrooms or bell peppers. You can prep the filling ahead of time for convenience. Experiment with different cheese combinations to suit your taste preferences.
