Ingredients
  

For the filling

  • 1 sheet refrigerated puff pastry dough Essential for that flaky and buttery texture.
  • 4 oz cream cheese, softened Adds creaminess to the filling.
  • 10 oz frozen spinach, thawed and squeezed dry The star ingredient that brings nutrients and flavor.
  • 2 cups freshly grated mozzarella cheese Provides gooeyness and cheesiness.
  • 1 tbsp Italian seasoning To infuse a herby richness.
  • 1 tsp garlic powder For aroma and flavor boost.
  • 1 tsp salt Enhances all the delicious flavors.
  • 1/2 tsp black pepper Adds subtle heat.

For the egg wash

  • 1 large egg For egg wash to give the pastry a beautiful glaze.
  • 2 tbsp water To mix with the egg.

Instructions
 

Preparation

  • Preheat your oven to 350°F (180°C), and line a rimmed baking sheet with parchment paper.
  • In a medium bowl, combine the thawed spinach, softened cream cheese, Italian seasoning, garlic powder, salt, and black pepper. Mix thoroughly.
  • In a small bowl, whisk together the egg and water for the egg wash.

Assembly

  • Unroll the sheet of puff pastry on a clean surface. Brush egg wash over the pastry and evenly spread the spinach filling across it.
  • Sprinkle the freshly grated mozzarella cheese on top.
  • Roll the pastry sheet lengthwise into a log shape, brushing the outside with more egg wash.
  • Slice the rolled pastry into 1-inch thick pinwheels, and arrange them on the prepared baking sheet.

Baking

  • Bake your pinwheels in the oven for about 10 to 15 minutes, or until golden brown and cheese is melted.
  • Let the pinwheels cool on the baking sheet for 5 to 10 minutes before serving.

Notes

Consider adding sun-dried tomatoes or artichokes for extra flavor. For a lighter option, substitute part of the cream cheese with Greek yogurt.
