  • 10 ounce Frozen Chopped Spinach, thawed and squeezed dry
  • 1 cup Shredded Cheddar Cheese
  • ½ cup Shredded Mozzarella Cheese
  • ½ cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • ¾ cup Milk
  • 3 large Eggs
  • ½ cup Onion, finely chopped
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • 1 tablespoon Olive Oil or Butter (optional) For greasing the pan

Preparation

  • Set your oven to 350°F (175°C). Lightly grease or line an 8×8-inch baking dish with parchment paper.
  • In a large bowl, whisk the eggs and milk together. Stir in flour, baking powder, salt, and pepper until smooth.
  • Add the spinach, onion, and both cheeses into the batter. Fold until everything is well combined.
  • Pour the mixture evenly into the prepared baking dish. Smooth the top with a spatula.

Baking

  • Bake for 35–40 minutes, or until the top is golden and a toothpick comes out clean from the center.
  • Let cool in the pan for 10 minutes. Then lift out and slice into squares.

Serving

  • Serve warm or at room temperature, garnished with extra cheese or herbs if desired.

Notes

Make sure to drain the spinach well to avoid extra moisture. You can add herbs like garlic powder or Italian seasoning for extra flavor. For a creamier texture, try adding cottage cheese or cream cheese to the batter. If you want a little heat, add some red pepper flakes.
