  • 1.5 cups carbonated soft drink as a substitute for beer
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper

For the fish

  • 1 pound cod fillets fresh and flaky
  • 2 cups crushed cornflake crumbs for crunch
  • 1 teaspoon Cajun seasoning for spice
  • 1 quart oil for frying

Preparation

  • In a medium-sized bowl, beat together the carbonated soft drink, all-purpose flour, egg, garlic powder, salt, and pepper until you achieve a smooth batter.
  • Gently add the cod fillets into the batter, ensuring they are well-coated without being damaged.
  • In a separate medium bowl, combine cornflake crumbs with Cajun seasoning until well blended.
  • Dip each piece of cod into the cornflake mixture, making sure they’re thoroughly coated on all sides.

Cooking

  • Heat oil in a large, heavy skillet or deep fryer to 365°F (185°C).
  • Fry the cod in the hot oil until they are perfectly golden and the flesh flakes easily with a fork.
  • Drain them on a paper towel-lined plate to remove excess oil.

Notes

Serve with a side of homemade tartar sauce or your favorite dipping sauce. Consider tweaking the spice level with more Cajun seasoning or chili powder. Maintain the right frying temperature for the best coating.
