Preparation

  • Preheat the oven to 425°F (220°C).
  • Wash and dry the medium russet potatoes.
  • Carefully slice them into thin rounds about 1/4 inch thick, ensuring to leave the bottom intact.
  • In a small bowl, combine the olive oil with the minced garlic, dried rosemary, and dried thyme.
  • Add salt and pepper to enhance the natural flavors.

Baking

  • Place the sliced potatoes on a baking sheet lined with parchment paper.
  • Brush the garlic-herb mixture generously over each slice.
  • Slide the baking sheet into the preheated oven and let the potatoes bake for 35-40 minutes.
  • Sprinkle grated Parmesan cheese over the potatoes during the last five minutes of baking, if desired.
  • Once golden brown and crispy, remove from the oven and garnish with freshly chopped parsley.

Notes

For quicker cooking, slice potatoes thinner. Ensure even thickness to avoid uneven cooking. Allow space between slices for crisping.
