  • In a food processor, combine the lemon juice, ground cumin, ground coriander, garlic, green chiles, cilantro, and salt. Pulse until you achieve a coarse but well-mixed consistency.
  • Gradually introduce the vegetable oil, continuing to process until you have a smooth and vibrant sauce. Adjust the seasoning with extra salt if necessary for the perfect flavor balance.

Grilling

  • Prepare the sardines by skewering them carefully. Sprinkle a generous amount of salt onto the fish to enhance their natural flavor.
  • Preheat your grill or cast-iron grill pan to medium-high heat.

Notes
