For the Blue Cheese Gravy

Preparation

  • Preheat your oven to 325 degrees Fahrenheit.
  • Season the chuck roast generously with kosher salt, black pepper, and fresh thyme.
  • Heat vegetable oil in a large pan over medium-high heat until it ripples.

Cooking

  • Add the seasoned roast to the pan and sear for 4-5 minutes on each side until it’s beautifully browned.
  • Once seared, place the halved onions and Yukon gold potatoes around the roast in the pan.
  • In a bowl, combine the beef broth, Worcestershire sauce, and remaining thyme; pour this mixture over the roast.
  • Cover the pan and place it in the preheated oven. Cook for about 3 to 3.5 hours.

Final Steps

  • When cooking is complete, remove the pan from the oven, discard the thyme sprigs, and gently take out the potatoes and the roast.
  • On the stovetop, stir in the heavy cream and 1/3 cup of blue cheese crumbles into the pan juices over medium-high heat. Whisk until the sauce thickens, about 6-8 minutes.
  • After the sauce has thickened, break the roast into large chunks, return them to the pot, and serve.
  • Serve in bowls with the halved potatoes and generous spoonfuls of blue cheese gravy. Finish with a sprinkle of remaining blue cheese crumbles.

Notes

Let the chuck roast sit at room temperature for about 30 minutes before cooking for even cooking. For a thicker gravy, simmer longer while whisking to avoid lumps. Goat cheese can be used as a substitute for blue cheese.
