For the Blackening Seasoning

  • 1 tablespoon paprika Smoked or sweet, adding depth
  • 1/2 tablespoon onion powder For subtle warmth
  • 1/2 tablespoon garlic powder Aromatic and robust

  • 1/2 teaspoon black pepper For a touch of heat

Instructions
 

Preparation

  • Gather all your ingredients and equipment.
  • In a small bowl, mix together all the blackening spices.
  • Pat the fish fillets dry with a paper towel.
  • Rub each side of the fillets with about one teaspoon of olive oil.
  • Coat both sides of the fish fillets with the seasoning mix. Shake off excess spice.

Cooking

  • Heat the remaining olive oil in a large skillet over medium-high heat.
  • Carefully place the fish in the pan and sear for 3-5 minutes until blackened.
  • Add the butter to the skillet, lifting the fish gently to let it flow underneath.
  • Flip the fish and cook for an additional 1-2 minutes until flaky.
  • Serve warm with rice and a green salad.

Notes

For smoky flavor, use smoked paprika. Marinate for 30 minutes for deeper flavor. Use cast-iron skillet for best results.
