Preparation

  • Begin by heating the oil in a large skillet or wok over medium-high heat.
  • Add the thinly sliced beef to the hot oil. Sear the beef until it’s browned, about 2-3 minutes. Once done, remove the beef from the pan and set it aside.
  • In the same pan, add the sliced onions. Sauté them until they’re soft and golden brown, which usually takes about 5 minutes.
  • Toss in the minced garlic and stir it for about 30 seconds, until fragrant.
  • Push the onions and garlic to the side of the pan and pour the beaten eggs into the cleared space. Scramble the eggs until just set.
  • Add the cold rice to the pan, breaking up any clumps. Mix everything together, ensuring the rice gets coated with the mixture.
  • Pour the soy sauce and oyster sauce evenly over the rice, stirring to combine all the flavors.
  • Finally, add the seared beef back into the pan, tossing everything together gently. Season with salt and pepper to taste.
  • Remove from heat and garnish with chopped green onions before serving.

Notes

To elevate your dish, consider marinating the beef, using leftover rice, adding vegetables like peas or carrots, adding chili paste for a spicy kick, or cooking in batches for optimal texture.
