  • Bring a large pot of salted water to a rolling boil and cook the rotini pasta until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Sauté diced onion and bell pepper for about 5 minutes until tender, adding minced garlic in the last minute.
  • Stir in the can of diced tomatoes and green chilies. If using, integrate cooked ground beef or sausage, and let it simmer for about 5 minutes.
  • Fold the cooked rotini pasta into the skillet, mixing it thoroughly with the sauce. Add reserved pasta water as needed for consistency.
  • Sprinkle shredded cheese over the top, cover the skillet, and let it sit on low heat until the cheese melts.
  • Taste and adjust seasoning with salt and pepper. Serve hot, garnished with fresh herbs or additional cheese.
