Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with colorful cupcake liners.
  • In a medium bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt.
  • In a large bowl, combine the vegetable oil, eggs, red food coloring, vanilla extract, white vinegar, and buttermilk. Mix until smooth.
  • Gradually add the dry ingredients to the wet mixture, stirring gently to avoid overmixing.
  • Spoon the batter into the cupcake liners, filling each about 2/3 full.

Baking

  • Bake the cupcakes in the oven for 18-20 minutes. Test doneness with a toothpick.

Frosting
