Preparation

  • In a medium mixing bowl, combine the ricotta cheese, chopped pistachios, honey, vanilla extract, cinnamon, and a pinch of salt. Mix until smooth.
  • Roll the mixture into bite-sized balls, roughly 1 inch in diameter.

  • Line a tray with parchment paper and place the bites on it with space between each.
