Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Lightly grease a 9-inch springform pan.
  • In a medium bowl, combine chocolate cookie crumbs and melted butter until well mixed.
  • Press the mixture evenly into the pan to form a crust and bake for 8-10 minutes. Let it cool completely.

Making the mousse

  • Place the chocolate chips in a heatproof bowl.
  • In a saucepan, heat 1 cup of heavy whipping cream over medium heat until just simmering.
  • Pour the hot cream over the chocolate chips and let sit for 2 minutes, then stir until smooth. Add powdered sugar and vanilla.
  • In a separate bowl, whip the remaining 1/2 cup of heavy whipping cream until soft peaks form.
  • Gently fold the whipped cream into the chocolate mixture until smooth.
  • Pour the mousse filling onto the cooled crust and refrigerate for at least 4 hours or overnight.

Topping and Serving

  • Whip the heavy whipping cream and powdered sugar until stiff peaks form.
  • Spread whipped cream over the set mousse layer and garnish with chocolate shavings or cocoa powder.

Notes

For best results, use high-quality chocolate and ensure all ingredients are at the right temperature. Can be made ahead of time and pairs well with fresh berries or hot chocolate.
