Main ingredients

  • 16 oz potato gnocchi Soft and pillowy, the star of the meal.
  • 5 oz fresh spinach A vibrant addition loaded with nutrients.

Instructions
 

Cooking

  • Heat 1 tablespoon of olive oil in a large, high-sided, heavy-bottomed skillet over medium heat.
  • Add the sliced mushrooms, generously seasoned with salt and pepper. Sauté for 1 to 2 minutes until lightly browned and softened.
  • Remove half of the cooked mushrooms and set aside.
  • In the same skillet, introduce the uncooked potato gnocchi, chicken broth, heavy cream, minced garlic, Italian seasoning, smoked paprika, and salt.
  • Stir thoroughly to combine and bring to a gentle boil over medium heat.
  • Cover the skillet and allow the gnocchi to cook for about 5 minutes while the sauce thickens.
  • Add the fresh spinach and continue to cook on medium heat, stirring frequently for around 5 minutes until the spinach wilts.
  • Season with additional salt, coarsely ground black pepper, red pepper flakes, and extra smoked paprika, if desired.
  • Top the gnocchi with the reserved half of the cooked mushrooms for presentation and extra flavor.

Notes

To ensure the gnocchi remains tender, cook them until they float in the sauce. Variations can include sun-dried tomatoes, artichokes, or proteins like chicken or shrimp. Drizzling truffle oil before serving adds a decadent touch.
