Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing and flouring them or lining them with parchment paper.
  • In a medium bowl, whisk together the sifted flour, granulated sugar, baking soda, cocoa powder, and salt.
  • In a large mixing bowl, combine the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and white vinegar. Whisk until thoroughly blended.
  • Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
  • Divide the batter evenly between the prepared cake pans.

Baking

  • Bake the cakes for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cakes to cool in their pans for 10 minutes before transferring them to a wire rack to cool completely.

Frosting & Assembly

  • Prepare the cream cheese frosting by beating the softened cream cheese and unsalted butter together until smooth and creamy.
  • Gradually add the powdered sugar, mixing on low speed until fully incorporated and fluffy. Add vanilla extract and a pinch of salt, mixing until smooth.
  • Once cooled, place one cake layer on a serving platter, frost the top with cream cheese frosting, and place the second layer on top.
  • Frost the top and sides of the entire cake with the remaining frosting.
  • Optionally, decorate with cake crumbs or edible decorations.
