Instructions
 

Preparation

  • Heat 1 tablespoon of olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic, sautéing for about 3-4 minutes until the onions are translucent.

Cooking

  • Add the can of diced tomatoes, vegetable or chicken broth, dried oregano, and dried basil. Season with salt and pepper.
  • Bring the mixture to a boil, then reduce to a simmer.
  • Introduce the frozen cheese ravioli into the pot and cook for 4-5 minutes.
  • Stir in the chopped spinach and let it wilt for another 2-3 minutes.
  • Ladle the soup into bowls, finishing with freshly grated Parmesan cheese.

Notes

For a lighter option, use whole grain or gluten-free ravioli. Substitute with vegetable-filled options or add various vegetables for added nutrition. To prevent mushy ravioli, follow package instructions closely.
