Preparation

  • Preheat the oven to 325°F (165°C) and line a 9x9-inch baking pan with parchment paper.
  • In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until moistened and press into the bottom of the prepared pan to form a crust.
  • Bake for 8-10 minutes, then let cool.

Making the Cheesecake Filling

  • In a large bowl, beat the cream cheese until smooth. Add sugar and vanilla extract; mix until creamy.
  • Add the eggs one at a time, beating well after each addition. Stir in the sour cream until fully incorporated.

Creating the Raspberry Swirl

  • Mash the fresh raspberries into a puree, setting aside a cup. Swirl the raspberry jam into the puree.

Baking

  • Pour cheesecake filling over the cooled crust. Drop spoonfuls of the raspberry mixture on top and use a toothpick to swirl it through the cheesecake.
  • Bake for 45-50 minutes until the center is set but slightly jiggly.

Cooling and Serving

  • Cool completely at room temperature, then refrigerate for at least 4 hours before cutting into bars.
  • Serve chilled and enjoy!

Notes

For best results, do not overmix the cheesecake filling. To enhance raspberry flavor, consider adding lemon zest. Serve with fresh raspberries or whipped cream for decoration.
