Ingredients

For the Raspberry Sauce

  • 2 cups fresh raspberries
  • 1/2 cup sugar
  • 1 tbsp lemon juice

For the Milkshake

  • 2 cups vanilla ice cream
  • 1 cup whole milk
  • 1/2 cup raspberry sauce made from raspberries

For Topping

  • 1 cup whipped cream light and fluffy
  • 1 tbsp powdered sugar for sweetening whipped cream
  • 1 graham cracker crushed for texture
  • 2 tbsp raspberry jam for glass drizzling
  • 4-6 pieces mini cheesecake slices store-bought or homemade
  • fresh raspberries for garnish
  • a few extra graham cracker crumbs for garnish

Instructions

Make the Raspberry Sauce

  • In a small saucepan, combine 2 cups of fresh raspberries, 1/2 cup of sugar, and 1 tablespoon of lemon juice. Cook over medium heat, stirring occasionally until the raspberries break down and the mixture thickens, about 8 to 10 minutes. Remove from heat and let cool to room temperature.

Blend the Milkshake

  • Combine the 2 cups of vanilla ice cream, 1 cup of whole milk, and 1/2 cup of raspberry sauce in a blender. Blend on high until smooth and creamy.

Prepare Your Glasses

  • Drizzle raspberry jam along the inside of each glass. Pour the milkshake mixture into the prepared glasses, filling them about 3/4 full.

Whip the Cream

  • In a separate bowl, whip the cream with 1 tablespoon of powdered sugar until soft peaks form.

Assemble the Frenzy

  • Spoon a dollop of whipped cream on top of each freakshake and sprinkle with crushed graham crackers. Top each shake with a mini cheesecake slice, fresh raspberries, and extra graham cracker crumbs.

Serve

  • Present your Raspberry Cheesecake Freakshakes with a straw and a spoon.

Notes

Chef’s Secret: Add a splash of cream cheese to enhance the cheesecake flavor. Optional Extras: Add more fruits like blueberries or strawberries for a mixed-berry twist. Make the raspberry sauce in advance and store in the refrigerator until assembling.
