  • In a blender, combine the frozen pineapple chunks, coconut milk, rainbow sherbet, and ice cubes. Blend on high until the mixture is smooth and creamy. If it’s too thick for your liking, feel free to add more coconut milk until you reach your desired consistency.
  • If you’re opting to include white rum, pour it into the blender at this step. Pulse briefly to mix everything together seamlessly.
  • Pour the piña colada into your favorite glasses, enjoying the beautiful array of colors.
  • Garnish each drink with a maraschino cherry and a slice of fresh orange. Serve immediately and enjoy your colorful tropical treat.

Notes

For extra flavor, add a splash of fresh orange juice or lime juice, or serve in hollowed-out pineapples or coconuts. Substitute coconut milk with almond or oat milk for a different flavor profile. Experiment with different sherbet flavors for variety.
