Preparation

  • In a medium saucepan, combine the sugar and water over medium heat. Stir occasionally until the sugar is fully dissolved.
  • Remove the saucepan from the heat and let it cool to room temperature.
  • Add the fresh lemon juice, cranberry juice, lemon zest, and vanilla extract to the cooled syrup and stir well.
  • If using, mix in the heavy cream to add richness.

Freezing

  • Pour the mixture into a shallow dish or freezer-safe container.
  • Freeze the mixture, stirring every 30 minutes for about 3 to 4 hours until it reaches a slushy consistency.

Serving

  • Once frozen and slushy, serve immediately or store in an airtight container in the freezer.
  • Optional: Garnish with additional lemon zest or fresh mint before serving.

Notes

For best results, always use fresh lemon juice. Adjust sweetness before freezing if needed. Stirring every 30 minutes prevents large ice crystals. For an adult twist, add a splash of a non-alcoholic sparkling drink.
