  • 1 cup fresh basil pesto Store-bought or homemade
  • 4 pieces flatbreads Store-bought or homemade
  • 8 oz fresh mozzarella cheese Sliced
  • 1 cup cherry tomatoes Halved
  • 2 tbsp olive oil For seasoning and drizzling

Preparation

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Season chicken breasts with salt and pepper; place on the baking sheet and drizzle with olive oil.

Cooking

  • Bake chicken for 20-25 minutes until it reaches an internal temperature of 165°F (74°C).
  • Let cool slightly before shredding into pieces.
  • Spread pesto generously over each flatbread.
  • Top with shredded chicken, mozzarella slices, and cherry tomatoes.
  • Drizzle with additional olive oil if desired.
  • Bake for another 10-15 minutes until cheese is melted and bubbly.
