Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  • Add the egg and vanilla extract, mixing until well combined.
  • In another bowl, whisk together the flour, baking soda, and salt. Gradually mix this into the wet ingredients until the dough comes together.
  • Fold in the chopped pecans and chocolate chips (if using).
  • Drop spoonfuls of dough onto a parchment-lined baking sheet, leaving space for spreading.

Baking

  • Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a lighter version, substitute some butter with applesauce or Greek yogurt. Experiment with spices or dried fruit for variations. Cookies can be frozen for up to three months.
