Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9-inch springform pan.
  • In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of the prepared springform pan. Bake for about 10 minutes, then set aside to cool.

Making the Cheesecake

  • In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy.
  • Add eggs one at a time, mixing thoroughly after each addition. Stir in the vanilla extract.
  • Pour the cheesecake batter over the cooled crust and spread evenly.
  • Bake for 30-35 minutes or until set and edges are light golden. Allow to cool.

Making the Peach Topping

  • In a medium bowl, mix sliced peaches with brown sugar, flour, cinnamon, nutmeg, vanilla extract, and lemon juice until well-coated.
  • Sprinkle cubed butter over the peach mixture. Spread this over the cooled cheesecake.
  • Return to the oven and bake for an additional 25-30 minutes until the topping is golden and bubbly.
  • Let the cheesecake cool completely at room temperature, then refrigerate for at least 4 hours or overnight.

Notes

Use fresh peaches for the best flavor. Soften cream cheese for a smoother batter. Experiment with spices, and consider adding chopped nuts for texture. Serve with whipped cream or caramel sauce.
